The sandwich as a budget lunch item
I am a big fan of soup and sandwich combos. For some reason, I think a soup and half a sandwich is always enough food to keep me going until dinner time (remember, I now eat the way Canadians do, with lunch at 12, 12:30 or 1pm. If I were still in Mexico or in Spain, I would eat no earlier than 2, and I would have a very big breakfast). As I mentioned earlier last week, I’m being more budgeted than 2010 now.
Earlier at the beginning of the year I decided that I would make a conscious effort to bring my own lunches to the university and to my office downtown, and as much as possible dinner as well. I found a really fast and inexpensive staple to consume for lunch: a sandwich. Actually, with the amount of exercise I do, I end up needing two. But my normal lunch has consisted in the past week of 2 sandwiches, a can of pop and a little individual bowl of yogurt.
Given that I am often strapped for time, the fastest lunch sandwich I can make is composed of 2 slices of bread, a few leaves of greens, onions, and guacamole, on top of some sliced chicken breast, roast beef or sliced turkey breast. Quick and easy sandwich to assuage your hunger.
